About this course

Food science applies the principles of chemistry, biology, physics and engineering to the study of food: its composition, safety, processing, preservation and quality. It is a discipline with real and immediate importance, sitting at the intersection of public health, environmental sustainability, consumer behaviour and industrial innovation. Understanding how food changes during processing, how pathogens are controlled, how nutritional quality is maintained and how new food products are developed requires a rigorous scientific education combined with practical laboratory and technical skills.

At Glasgow Caledonian University, this four-year full-time programme gives you a thorough grounding in the science behind the food we produce and consume. You will study the chemistry of proteins, fats, carbohydrates and micronutrients, and examine how these components behave during cooking, manufacturing and storage. Microbiology and food safety are central concerns, and you will learn how hazard analysis and quality control systems are applied in food production environments.

The programme also addresses food product development, sensory evaluation and the regulatory frameworks that govern food safety and labelling in the UK and internationally.

Laboratory work is a core part of the experience. You will develop practical skills in analysis and testing alongside your theoretical knowledge, and you will learn to interpret data and draw scientifically sound conclusions.
